There are three types of fatty acids, based on the number of carbon atoms in their structure. Short chain fatty acids, produced in the gut when bacteria breaks down fiber, have less than six carbons. Long chain fatty acids – such as Omega 3s from fish oil – have thirteen to twenty-one. Medium chain fatty acids – MCTs – are found in foods like coconut oil and have between six and twelve carbons.
